Electromechanical horizontal ice cream maker with automatic extraction with time control to ensure the correct gelato consistency.
- : STAFF Ice system 1959
- Article number: HTE200
A batch freezer that turns liquid mix into gelato or sorbet in a single cycle, designed for professional kitchens that need consistent texture and output. The HTE200 cools the mix by circulating refrigerant through a jacket around the stainless-steel tank while a motor-driven mixer scrapes the frozen layer from the walls and folds it back into the centre. This constant movement aerates the mix, preventing ice crystals and creating the smooth, creamy finish expected in artisanal gelato.
The operator pours the prepared mix into the tank, selects the desired consistency—creamy, compact or dry—using the Ad Hoc control, and starts the cycle. The inverter ramps the mixer speed gradually to protect the transmission, while the POM scrapers self-adjust to maintain contact with the tank walls. Throughout the cycle, the machine monitors temperature and viscosity; once the set point is reached, an acoustic signal sounds and the extraction phase can begin. The door opens on double hinges for easy access, and the non-slip mat inside the tank keeps the container steady during removal. A defrost switch on the control panel allows the tank to be cleared quickly between batches.
Construction is stainless steel throughout: the tank, mixer, door and support stand. The door is of extra thickness to retain cold and reduce condensation. Three mixer speeds are available, and the machine can be ordered with air, water or combined cooling systems. Acoustic and visual indicators alert the operator to any malfunction, while the inverter protects the motor from sudden mechanical loads. The unit is rated for use in wet environments and low ambient temperatures, making it suitable for back-of-house or dedicated gelato stations.
The 230 V supply matches standard UK commercial circuits, and the 110 kg weight requires a fixed position on the worktop or floor. Footprint of 435 mm wide by 798 mm deep allows placement against a wall or between other equipment, while the 1257 mm height keeps the control panel within easy reach. Capacity of 20 L per hour supports small to medium production runs, with each cycle yielding between 1 and 4.5 L of finished product.
Cleaning follows from the materials and construction: the stainless-steel tank and mixer are rinsed after each use, while the POM scrapers can be removed for thorough cleaning. The defrost switch speeds up the thawing of any residual mix, and the non-slip mat is wiped down to maintain grip. The door seals should be checked regularly to ensure a tight closure and prevent cold loss.
Variants include the cooling method—air, water or air-water—each adding to the base configuration. The HTE200 comes complete with the support stand, eliminating the need for additional mounting hardware.
