An ice-cream showcase keeps frozen product at serving consistency without hardening or crystallising. Gravity cooling circulates cold air from a top-mounted evaporator down through the cabinet, letting dense cold air settle naturally around the tubs. This method avoids the turbulence of forced-air systems, which can dry the surface of exposed ice cream. The steady, gentle flow maintains an even temperature across every shelf, so every portion scooped is equally smooth and creamy.
The operator wheels the 8SM into position, plugs it into a dedicated circuit, and sets the thermostat between -18 and -12 °C. Once the cabinet reaches the chosen temperature, the automatic defrost cycle begins: the compressor shuts down intermittently, allowing frost to melt and drain away without manual intervention. The stainless-steel scoop-wash container sits at the front, filled with warm water to keep the scoop clean and ready between servings. Ice-cream tubs are loaded directly onto the shelves, and the curved glass front lets customers view the flavours while keeping the cold air inside.
The entire structure is built from stainless steel, including the exterior panels, internal shelves and finishing elements. The gravity-cooling evaporator is housed in the top of the cabinet, shielded by a stainless-steel grille. Four lockable castors allow the unit to be moved for cleaning or reorganisation, then secured in place during service.
The thermostat control sets the cabinet temperature anywhere between -18 and -12 °C, covering the range needed for scoopable ice cream. The 200 kg weight indicates a sturdy construction that can be shifted by two people but will not roll accidentally during use. The 2250 mm width provides space for multiple tubs side by side, while the 1200 mm depth fits neatly against a standard worktop or counter. The 2030 mm height allows staff to reach the top shelf without stretching.
Cleaning involves emptying the scoop-wash container daily, wiping the stainless-steel surfaces with a mild detergent, and vacuuming the evaporator grille to remove dust. The automatic defrost cycle eliminates the need to scrape ice manually, but the drain tray should be checked weekly to ensure it is clear.
The 8SM is a single model; no variants are listed.
The showcase is categorised under refrigeration equipment for frozen desserts in the BHS professional catering catalogue.
