Techical Data Sheet

A gas-fired pizza oven heats a baking chamber with direct flame beneath a solid stone deck. The stone absorbs and radiates heat evenly, so each pizza cooks at the same rate across its surface. Burners are arranged in zones that match the oven's capacity, allowing the operator to control the intensity under each pizza independently. This design eliminates hot and cold spots, reducing the need to rotate trays and cutting energy waste. The Flame model uses Activestone technology, which further standardises the heat distribution by combining the thermal mass of the stone with the direct flame, giving consistent browning and crisping from edge to centre.

To start the oven, the operator opens the gas valve and ignites the burners. Once the stone reaches the set temperature—up to 450 °C—the pizzas are slid in on a peel. The low-voltage lighting inside the chamber lets the operator watch the bake without opening the door, preserving heat. Each pizza cooks in minutes, and the operator removes them in the same order they were loaded. When the service ends, the burners are turned off and the oven is left to cool before cleaning.

The oven is built on a stainless-steel frame with a heavy-duty stone deck. The exterior panels are also stainless steel, chosen for durability and ease of cleaning in a busy kitchen. The door is hinged at the bottom, opening downward to form a heat shield for the operator. Inside, the burners are cast iron, designed to withstand the high temperatures and frequent cycling of a professional service.

Controls include a gas valve for each burner zone, a main gas shut-off, and a thermostat that regulates the maximum temperature. The 12 V lighting circuit is separate, running from a low-voltage transformer for safety. The oven requires a 380 V three-phase supply with neutral and earth, which is standard for commercial kitchens with high-power gas appliances.

The 14 kW power rating indicates the load the oven places on the gas supply; in practice, this means the kitchen must have a gas line sized to deliver the required flow without pressure drop. The 132 kg weight shows the oven is floor-standing and must be moved with a trolley or pallet jack. The footprint of 1130 mm by 1110 mm fits a standard worktop depth, allowing it to sit alongside other kitchen equipment without overhang.

Cleaning is limited to the surfaces the entry names. The stone deck is brushed free of ash and food debris after each service. The stainless-steel exterior is wiped with a damp cloth and a mild detergent. The burners are removed periodically and cleaned with a wire brush to prevent clogging. The oven must be installed by qualified personnel to ensure the gas connection is leak-tested and the ventilation meets safety standards.

The Flame oven is available for either natural gas or LPG; the customer must specify the type at order. Two single units can be stacked to double capacity without increasing the footprint.
