A gas fryer heats two separate vats of oil with high-output stainless steel burners, each producing a horizontal flame beneath its vat. The heat transfers through the oil, raising its temperature evenly so that food lowered in a basket cooks quickly and uniformly. A thermostatic control and safety thermostat keep the oil within set limits, preventing overheating and ensuring consistent results across batches.
To operate, the user fills each 18 litre vat with oil, ignites the burners using the piezoelectric device and pilot flame, then sets the desired temperature on the thermostatic control. Once the oil reaches the set point, the basket is loaded with food and lowered into the vat. The operator monitors the cooking time and removes the basket when done. A front drainer simplifies emptying the vats, and a stainless steel filter in the oil collection tank catches debris before the used oil is drained away.
The fryer is built from 18/10 AISI 304 stainless steel throughout. The twin vats are moulded with rounded corners and continuous welding to eliminate crevices where food particles or oil residue could collect. The 1 mm worktop is also stainless steel, providing a durable surface that aligns precisely with the joints for a seamless fit. The burners include a safety valve and thermocouple to shut off the gas if the flame fails, and the pilot flame ensures automatic re-ignition.
Each control on the front panel governs one vat: the thermostatic dial sets the oil temperature, the safety thermostat overrides it if the oil becomes too hot, and the gas valve controls the burner output. The 36 kW power rating indicates the total gas load the fryer draws, which requires a dedicated commercial gas supply line. The 800 mm width and 114 kg weight mean the unit must be positioned on a stable, level floor with sufficient clearance for ventilation and access to the rear connections.
Cleaning involves draining the oil through the front drainer, removing the stainless steel filter for rinsing, and wiping down the rounded vats and worktop with a non-abrasive cloth. The continuous welding and rounded corners reduce the areas where grease can accumulate, making daily upkeep quicker and more thorough.
The MAGISTRA PLUS 900 is configured as a twin-vat gas fryer with two 18 litre vats and matching baskets sized 270 x 360 x 140 mm. It is listed in the professional catering equipment catalogue under gas fryers for medium to high-volume frying.
