A professional gas fryer heats two independent vats of oil with direct gas burners beneath each tank. The burners raise the oil temperature quickly and evenly, while a thermostatic control system maintains the set level. This method gives consistent frying results: food cooks at the same rate, absorbs minimal oil and develops a crisp exterior without over-browning. The closed stand collects the burners and gas lines inside a stainless steel cabinet, shielding them from kitchen spills and making the unit stable on the floor.
The operator loads each 7 litre tank with fresh oil, then ignites the gas burners. A safety thermostat cuts the gas supply if the oil overheats, while a separate control thermostat keeps the temperature steady. Once the oil reaches the set point, the operator lowers the fry baskets into the tanks and sets a timer if the model has one. Food cooks while submerged, and the operator lifts the baskets when the timer sounds or the food is done. A large front drainer catches excess oil as the baskets are removed, and a stainless steel filter in the oil collection tank strains out crumbs before the used oil is drained.
The fryer is built from 18/10 AISI 304 stainless steel, with moulded tanks that are continuous-welded and have rounded corners. This construction resists corrosion, prevents oil from seeping into seams and allows thorough cleaning. The closed stand is also stainless steel, with a cabinet that encloses the gas burners and a worktop that supports the tanks and controls.
Controls include a safety thermostat that shuts off the gas if the oil temperature exceeds safe limits, and a control thermostat that maintains the set frying temperature. Models with a digital display add automatic melting, precise temperature control, cooking time settings and programmable cycles for common frying tasks.
The gas power rating of 6.25 kW per tank indicates the load on the gas supply; this fryer requires a dedicated commercial gas line. The 7 litre volume per tank sets the batch size for each frying cycle, while the 62 kg weight means the unit is moved with a trolley or two people. The 400 × 730 × 1180 mm footprint shows the floor space it occupies, with the height including the closed stand and worktop.
Cleaning involves draining the oil through the outlet system into the collection tank, then wiping down the stainless steel tanks and worktop. The rounded corners and continuous welds prevent oil from pooling in crevices, and the stainless steel filter in the oil collection tank is removed and cleaned separately. The gas burners and lines are enclosed in the stand and require no daily maintenance.
The Domina Pro 700 is available in versions with and without a digital display. The digital-display models include automatic melting, cooking time settings and programmable frying cycles.
This fryer is listed in the professional catering equipment catalogue under gas fryers with closed stands.
