PROEVO+ PPDA 207G is a professional gas convection oven with mechanical controls, designed for kitchens where durability and a classic approach are essential. It is particularly suitable for medium and large-scale catering operations. The ovens are available in various sizes.
A gas convection oven circulates hot air around food with a powerful fan, spreading heat evenly across every tray. The fan draws air over gas burners, warming it before pushing it through ducts that surround the cooking chamber. This method eliminates cold spots, so dishes on every shelf finish at the same time. Steam injection adds moisture to the chamber, preventing dryness and helping crusts form without over-browning. When steam and convection combine, the oven can roast, bake, and steam simultaneously, giving crisp exteriors and juicy interiors in a single cycle.
The PPDA 207G is loaded through a full-width door that opens to a chamber sized for seven GN 2/1 gastronorm trays. The operator sets the desired temperature between 30 and 270 °C, selects one of three modes—convection, steam, or combi—and starts the cycle. An automatic reverse fan keeps air moving in alternating directions, ensuring heat reaches every corner. Humidity control adjusts the microclimate inside the chamber, so bread rises evenly and meats stay succulent. When the timer signals, the trays are removed and the next batch can begin immediately.
The oven is built from stainless steel, forming a rigid frame that resists warping under daily use. A 67 mm gap between trays allows air to circulate freely, so multiple dishes cook at once without flavour transfer. The gas burners ignite quickly, cutting pre-heat time, while a small electric element powers the controls and fan. Mechanical dials set temperature, time, and mode, giving instant feedback without digital menus.
A 16 kW gas input draws a steady supply, suitable for a dedicated commercial circuit, while the 0.5 kW electric load runs on a standard 230 V single-phase connection. The 1050 mm width fits a standard worktop or can be stacked with compatible units, and the 900 mm depth leaves room for rear clearance without overhanging counters. The 800 mm height allows trays to be slid in at waist level, reducing strain during service.
The steam injection system introduces water directly into the chamber, reducing the need for manual spraying and cutting cleaning time. Stainless steel surfaces wipe clean, and the automatic reverse fan prevents grease build-up on the blades. The oven is part of the Inoxtrend PROEVO+ series, designed for continuous use in professional kitchens.
The PPDA 207G is a floor-standing unit with a single chamber and no stated variants.
