A gas convection oven circulates hot air around the chamber with a powerful fan, spreading heat evenly across every tray. The fan's steady flow eliminates cold spots, so food cooks at the same rate whether it is placed at the top, middle or bottom. Gas burners beneath the chamber heat the air quickly, and the fan then pushes it through ducts that run along the sides and back, ensuring every part of the oven reaches the set temperature without delay. This method cuts pre-heat times and keeps energy use low, which is critical when the oven runs for long service periods. The PPDA 120G adds steam injection to the circulating air. A small boiler inside the unit turns water into steam, which is released into the chamber at the touch of a control. Steam condenses on the food surface, transferring heat faster than dry air can, so roasts brown sooner and bread crusts form without drying the interior. When the oven switches to combi mode, the fan continues to move the mixture of hot air and steam, balancing crispness and moisture. Humidity sensors monitor the chamber microclimate and adjust the steam output automatically, so the operator does not need to open the door to check or spray water manually. To start a cycle, the operator loads up to twenty GN 1/1 trays onto the included trolley, wheels it into the chamber and closes the door. The mechanical controls on the front panel set the temperature between 30 °C and 270 °C, the timer, and the cooking mode—convection, steam, or combi. Once the programme begins, the fan starts immediately, drawing air across the gas burners and distributing it evenly. The automatic reverse function changes the fan direction at intervals, preventing any single tray from receiving more heat than the others. When the timer ends, an audible signal sounds and the fan stops, leaving the food ready for service. The chamber is built from stainless steel, with 65 mm spacing between each tray to allow air to flow freely. The same material is used for the outer panels, door and control panel, resisting corrosion and standing up to daily cleaning. The gas burners and steam boiler are housed in a separate compartment beneath the chamber, accessible from the front for maintenance. A 230 V single-phase supply powers the fan, controls and steam boiler, while the gas connection provides the main heating load. The 29 kW gas rating reflects the oven's ability to recover temperature quickly after the door is opened or cold food is loaded, keeping service times short. The 1.5 kW electric load covers the fan and controls, so the unit can still circulate air and run programmes if the gas supply is interrupted. The 970 mm width, 1030 mm depth and 1880 mm height give the oven a footprint that fits standard kitchen layouts, while the included trolley simplifies loading and unloading. After a full service the oven's seamless stainless steel chamber wipes down in minutes, leaving no crevices for grease or scale to hide. The steam injection system has a self-drain function that removes residual water after each use, preventing scale build-up. The fan's automatic reverse also helps dislodge any loose particles, which can then be wiped away. The gas burners and steam boiler should be inspected periodically by a qualified technician to ensure safe operation. The PROEVO+ series places this model in Inoxtrend's range of professional gas convection ovens designed for high-volume kitchens that require consistent results and low running costs.
