Combinated gas oven with convection and steam for 7 baking sheets GN 1/1. It has a digital combined control and a touch screen.
A gas convection oven circulates hot air around food using a fan, ensuring even cooking and faster results than static heat. The fan's speed and direction can be adjusted, distributing warmth uniformly across every tray, which prevents hot spots and allows multiple dishes to cook simultaneously without flavour transfer. This method reduces cooking times and energy use while maintaining consistent texture and moisture in meats, pastries and baked goods.
The LUDT107G from Inoxtrend is built to hold seven GN 1/1 gastronorm trays, each spaced 67 mm apart to accommodate large roasts, sheet pans or stacked containers. The operator selects a preset programme or sets the temperature between 30 °C and 270 °C, then starts the automatic preheating cycle. Once the oven signals readiness, trays are loaded through the double-glazed door, which stays cooler on the outside for safety and easier cleaning. A core probe monitors internal food temperature, adjusting heat to hit the target without overcooking, while the exhaust valve manages steam and smoke. After cooking, the holding function keeps dishes warm at a lower temperature until service.
The stainless-steel interior and exterior resist corrosion and staining, while the double-glass door allows visibility without heat loss. Two ventilation speeds with auto-reverse prevent uneven airflow, and the Delta T function maintains a precise difference between oven and food temperature. Automatic washing uses detergent tablets to clean the cavity without manual scrubbing, and a USB connection lets chefs save or share custom programmes.
With dimensions of 820 mm wide, 900 mm deep and 780 mm high, the unit fits standard worktop heights and can be positioned against a wall or island. The 0.3 kW electrical requirement powers the control panel and fan, while the main heat source is gas, reducing the load on kitchen circuits. A temperature range from 30 °C to 270 °C covers everything from gentle proofing to high-heat roasting, and the 220-240 V voltage matches UK mains supply.
Cleaning involves running the automatic wash cycle with a tablet, wiping the door gasket and exterior surfaces, and occasionally checking the exhaust valve for blockages. The oven includes 150 pre-established programmes for common dishes, and custom settings can be stored for repeat use. The cooking and holding function allows chefs to prepare dishes in advance and keep them at serving temperature without drying out.
