Level-Up Analogic is a gas heated professional oven 7 levels with analogic control panel for heavy duty use.
A gas convection oven circulates hot air around food using a fan, spreading heat evenly and speeding up cooking. Direct steam injection adds moisture, preventing drying and enhancing texture. This method suits delicate dishes like fish or pastries, as well as roasts and baked goods, by controlling humidity and temperature precisely. The fan's auto-reverse function alternates airflow direction, ensuring consistent results across all trays without manual rotation.
The CDA107G loads trays lengthwise, a layout favoured in medium and large kitchens for efficient workflow. The operator selects one of five modes: convection for dry heat, steam for moisture, combi for both, regeneration to reheat without drying, or hard steam for rapid cooking at 110 °C. Temperature adjusts between 30 °C and 270 °C, covering everything from gentle proofing to high-heat roasting. Pre-set programmes store 300 recipes, allowing quick recall of time and temperature settings for repeat dishes.
Trays slide into guides spaced 67 mm apart, accommodating standard GN 1/1 containers. The double-glazed door retains heat while allowing visibility, and the interior's smooth surfaces simplify cleaning. A manual steam release valve prevents pressure build-up, while a safety valve guards against overpressure. Visual alerts signal malfunctions, and a USB port logs HACCP data or transfers recipes between units.
Stainless steel construction resists corrosion and withstands daily use in busy kitchens. The analogue control panel sets temperature, time, and mode, with clear indicators for each function. The 800 mm width and depth fit standard worktop layouts, while the 12 kW power rating requires a dedicated gas supply. The 220-240 V electrical connection powers the fan and controls, operating on a standard single-phase circuit.
Cleaning involves wiping the interior after each use to remove food debris, with periodic descaling to prevent mineral build-up from steam. The door's double glass requires occasional cleaning to maintain visibility, and the fan's auto-reverse function reduces grease accumulation on trays. The USB port allows software updates or recipe backups, ensuring the oven adapts to changing menus.
The CDA107G offers three primary cooking modes—convection, steam, and combi—alongside regeneration and hard steam settings. Its 7-tray capacity suits batch cooking, while the 67 mm tray spacing accommodates taller dishes without crowding. The oven's footprint and power requirements integrate into professional kitchen designs, supporting both standalone and stacked installations.
