Indirect heating cap. 150 l
A gas boiling pan heats water in an interspace jacket, turning it to low-pressure steam that evenly warms the cooking vessel without direct flame. This indirect method prevents hot spots, scorching or burning, giving consistent results across the entire 150 litre capacity.
The operator fills the tank through the hot and cold water tap mounted on the worktop, then ignites the pilot flame with the piezo-electric starter. Once the pilot is alight, the main stainless steel tubular burner fires, heating the interspace water. A viewer on the front panel shows the water level, while a safety valve and pressure gauge monitor the steam. The lid, made of AISI 304, traps steam and heat; a double-insulated version is available for even greater efficiency. After cooking, the swivel nozzle allows quick rinsing or filling without moving the pan.
The tank sides and interspace are constructed from AISI 304 stainless steel, while the bottom uses AISI 316 for extra corrosion resistance. The burner features a self-stabilising flame and a thermocouple safety device that cuts the gas if the pilot goes out. A 21 kW rating means the unit draws significant gas load, requiring a dedicated commercial supply. The 148 kg weight indicates a floor-standing appliance that must be positioned before delivery, while the 800x900x850 mm footprint demands a clear worktop space of nearly one square metre.
Controls include the piezo-electric ignition for the pilot, a pressure gauge for steam monitoring, and the safety valve with its own gauge. The hot and cold water tap simplifies filling and cleaning, eliminating the need for separate hoses or jugs.
Cleaning involves draining the interspace water through the viewer port, scrubbing the AISI 316 bottom and AISI 304 sides, and wiping the lid. The swivel nozzle should be descaled regularly to prevent lime build-up. The burner and pilot assembly require occasional brushing to remove carbon deposits.
An optional double-insulated lid improves thermal retention for longer cooking processes. The unit is part of the MBM DOMINA PRO 900 range, positioned as heavy-duty gas catering equipment for professional kitchens.
