Indirect heating cap. 100 l
A gas boiling pan heats water in an interspace jacket around the tank, creating low-pressure steam that transfers heat evenly across the entire cooking surface. This indirect method prevents hot spots and scorching, allowing large batches of soups, stews, sauces or pasta to cook uniformly without stirring. The steam jacket also retains heat longer than direct flame, reducing gas consumption once the set temperature is reached.
To begin, the operator fills the interspace with water through the front viewer until the level is visible. The cold water tap on the worktop supplies the initial fill; the hot tap provides top-up during extended use. The gas burner ignites via piezo-electric spark, and the pilot flame is monitored by a thermocouple safety device that shuts off the gas if the flame fails. Once the interspace water reaches boiling, steam circulates around the tank, heating the contents inside. The lid, made of AISI 304 stainless steel, minimises steam and heat loss; an optional double-insulated lid further improves thermal retention for long simmering processes.
Loading is done through the hinged lid, and the swivel nozzle tap allows safe filling or emptying without lifting the pan. The 1 mm AISI 18/10 stainless steel worktop provides a stable surface for preparation and cleaning. When cooking is complete, the pan drains through a bottom outlet or is ladled out manually.
The tank sides and interspace are constructed from AISI 304 stainless steel, while the tank bottom uses AISI 316 for enhanced corrosion resistance in high-moisture environments. The gas burner is a stainless steel tubular unit with a self-stabilising flame, and a safety valve with pressure gauge monitors interspace pressure to prevent over-pressurisation.
Controls include a piezo-electric ignition button for the pilot flame, a gas control knob to adjust the burner output, and a thermocouple safety cut-off that stops gas flow if the flame extinguishes. The interspace water-level viewer on the front panel allows quick visual checks during operation.
A 21.0 kW gas input provides rapid heat-up for a 100 litre volume, suitable for high-demand kitchen environments. The 143 kg weight ensures stability on the floor, while the 800x900x850 mm footprint fits standard worktop layouts and allows side-by-side alignment with other MAGISTRA PLUS modules. The pan's construction supports continuous use in professional kitchens where large-volume cooking is required.
Cleaning involves draining the tank and interspace, then wiping down the stainless steel surfaces with non-abrasive cleaners. The worktop and lid can be sanitised after each service, and the burner assembly should be inspected periodically for gas flow and flame stability. The interspace water should be replaced regularly to prevent mineral build-up that could impair heat transfer.
An optional double-insulated lid is available to improve heat retention during extended cooking cycles.
This boiling pan is categorised under professional gas catering equipment for large-volume liquid cooking.
