The operating principle involves high-performance tubular burners made of stainless steel that heat a jacket of water surrounding the main cooking tank. This indirect method provides gentle and even heating of the contents within the tank, preventing scorching and allowing for precise temperature management.

Operation begins with the user connecting to the hot and cold water supply via the tap and adjustable spout to fill the tank. The gas supply is ignited using the piezo system, which also activates a pilot flame. Once the water jacket is heated, the contents can be added to the main tank. The minimum/maximum temperature control valve, linked to a thermocouple safety system, allows the user to set the desired cooking temperature and cuts off the gas supply if the pilot flame extinguishes. Cooking is completed when the contents reach the required state, after which they are drained through the front chromed brass cock, which has a 2-inch insulated handle.

The construction includes a tank bottom made of acid-resistant AISI 316 stainless steel, with walls of AISI 304 stainless steel. The unit is fitted with a balanced lid made of AISI 304 steel, complete with a heat-resistant handle. The supporting structure and external casing are also constructed from AISI 304 stainless steel. Thermal insulation is provided by thick fibreglass panels. The unit is finished with adjustable feet made of AISI 304 stainless steel.

Controls include a minimum/maximum temperature control valve for setting the cooking temperature, a piezo ignition system, and a pilot flame. The safety system is linked to a thermocouple.

The power rating of 21 kW indicates the maximum rate at which the unit consumes gas and generates heat. The dimensions of 800 mm in length, 900 mm in width, and 850 mm in height define the physical space required for installation. The tank capacity is listed as 139 litres.
