An electric fryer heats a measured volume of oil to the temperature needed for frying, then holds that temperature while a basket of food is lowered into the oil. The heat transfers quickly from the oil to the food, cooking it evenly and creating a crisp outer layer. Because the oil surrounds the food on all sides, the process is faster than dry-heat methods and uses less energy for the same output. The fryer's thermostat cycles the heating element to maintain the set temperature, preventing the oil from overheating and ensuring consistent results across batches.
The operator fills the tank with fresh oil, sets the desired temperature on the digital display, and selects a cooking programme if required. Once the oil reaches the set temperature, the basket is loaded with food and lowered into the oil. The digital timer counts down the cooking time, and an audible signal indicates when the batch is ready. The basket is lifted out, drained briefly over the tank, and the food is transferred to a holding area. The fryer remains at temperature for the next batch, so there is no waiting between loads.
The fryer is built from 18/10 AISI 304 stainless steel, with moulded, continuous-welded tanks that have rounded corners for easy cleaning. A large front drainer simplifies oil changes, and a stainless-steel filter in the oil collection tank removes debris before the oil is drained. The digital display models include automatic melting, precise temperature control, and programmable cooking cycles for common items.
Controls on the digital panel allow the operator to set the oil temperature, programme cooking times, and store frequently used settings. The safety thermostat overrides the main control if the oil temperature exceeds safe limits, shutting off the heating element to prevent fire or oil degradation.
A 22.5 kW power rating means the fryer draws a substantial current and must be connected to a dedicated 400 V 3-phase circuit. The 20 litre oil capacity allows large batches of food to be cooked at once, reducing the number of cycles needed during peak service. The unit's 56 kg weight requires a stable worktop or stand, and the 400 mm depth, 900 mm width and 870 mm height determine the space it occupies on the kitchen floor.
Cleaning involves draining the oil through the front drainer, removing the stainless-steel filter for washing, and wiping down the interior with a non-abrasive cloth. The rounded corners and continuous welds prevent food debris from becoming trapped, so sanitisation is straightforward. The digital display and controls should be wiped with a damp cloth, avoiding harsh chemicals that could damage the panel.
The FRBE94AHP is the high-productivity model in the DOMINA 900 range, offering faster temperature recovery for kitchens with limited space. Other versions in the series include models with analogue controls and varying tank capacities.
This fryer is listed in the MBM professional catering catalogue under electric fryers with digital control.
