A twin-basket electric fryer heats two separate 17 L vats of oil to crisp and cook foods simultaneously. Electric elements immersed in the oil transfer heat directly, raising the temperature quickly and evenly. The fryer maintains the set level by cycling the elements on and off, controlled by a precision thermostat. A second, safety thermostat cuts power if the oil overheats, preventing fire and oil breakdown.
The operator fills each 17 L vat with fresh oil, then sets the desired temperature on the control panel. Once the oil reaches the set point, the green indicator lights, showing the elements are live. The operator lowers the baskets into the hot oil, and the food cooks through rapid heat transfer. After the timer signals, the baskets are lifted, draining oil back into the vat. A large, rounded expansion bowl above each vat catches any oil displaced by the baskets, preventing spills across the worktop.
The fryer is built from AISI 304 stainless steel, 1.5 mm thick, pressed in a single piece to eliminate seams. The top table and expansion bowls are also pressed stainless steel, while the oil-drain tap is chromate-brass. High-performance sheathed resistors heat the oil; they pivot on a special bracket for easy cleaning. A stainless-steel filter traps debris when oil is drained into the steel bowl beneath the tap. The door is stainless steel with a magnetic catch, and the legs adjust to level the unit on uneven floors.
The control panel has two indicator lights: an orange light shows the unit is powered, and a green light confirms the heating elements are active. The precision thermostat sets the cooking temperature up to 190 °C, while the safety thermostat cuts power if the oil exceeds 230 °C. The thermostat bulbs sit inside the resistors, shielded from accidental knocks.
A 33 kW power rating means the fryer requires a dedicated 400 V three-phase circuit, common in professional kitchens. The 800x900x850 mm footprint fits a standard worktop space, while the 97 kg weight requires two people to move the unit safely. The twin 17 L vats allow separate batches or different foods to be fried at once, doubling throughput without mixing flavours.
Cleaning involves draining the oil through the chromate-brass tap into the steel bowl, where the stainless-steel filter catches debris. The resistors pivot out for scrubbing, and the pressed stainless-steel vats and expansion bowls wipe clean without trapping food particles. The adjustable legs and magnetic door simplify access for deep cleaning.
