A bratt pan combines the functions of a frying pan, braising pan, griddle and stockpot in one large, flat-bottomed vessel. Electric heating elements beneath the tank warm the cooking surface evenly, while the broad, shallow shape exposes food to consistent heat across the entire base. This design allows simultaneous searing, sautéing and simmering without hot spots, making it possible to prepare large batches of stews, sauces, risottos or stir-fries in a single operation. The manual tilt mechanism lets the operator pour liquids or transfer cooked food directly into serving or storage containers without lifting the pan, reducing strain and spillage.
To use the CASTA LQ/BREI80M, the operator fills the tank via the tap spout on the top edge, then sets the thermostat to the desired temperature. The armoured Incoloy 800 heating elements beneath the 12 mm thick AISI 304 steel base heat the pan gradually and evenly, while the safety thermostat monitors for overheating. Once the cooking cycle is complete, the manual tilt lever is released; the balanced lid, held by a tension spring, stays in any open position, allowing safe access to the contents. The pan tilts forward smoothly, draining liquids or sliding solid food into a tray or serving dish.
The entire unit is constructed from AISI 304 stainless steel, including the tank, lid, hinge, handle, tap spout and adjustable feet. The 12 mm thick tank bottom resists warping and distributes heat evenly, preventing scorching even during prolonged use. The adjustable feet level the pan on uneven worktops, while the spring-balanced lid reduces operator fatigue during repeated opening and closing.
A 10 kW power rating means the pan draws a substantial load, requiring a dedicated circuit in a professional kitchen. The 800x900x850 mm footprint occupies a fixed space on the worktop, so the unit is positioned where it can be tilted without obstruction. The manual tilt mechanism provides precise control over draining, allowing the operator to stop at any angle without effort.
Cleaning involves rinsing the tank after each use to prevent residue build-up. The tap spout is flushed to clear any food particles, and the lid and hinge are wiped down to maintain hygiene. The armoured heating elements beneath the tank are accessed by removing the base panel, where any grease or debris is cleaned to ensure efficient heat transfer. The adjustable feet are checked periodically to ensure stability, and the manual tilt mechanism is lubricated as needed to maintain smooth operation.
The LQ/BREI80M is a single model with no variants. It is categorised under professional cooking equipment, specifically tilting bratt pans, and is designed for use in commercial kitchens, catering operations and food production facilities.
