The VERSO convection oven with mechanical control ensures stable performance, ease of use, and reliable results in daily operation. It is suitable for professional kitchens with medium workload, offering efficient ventilation, versatile cooking options, and a durable construction.
A convection oven circulates hot air around food using a fan, eliminating cold spots and cooking dishes evenly without the need to rotate trays. The fan pulls air over heating elements, then pushes it through ducts that surround the cooking chamber, transferring heat quickly and maintaining a consistent temperature throughout. This method reduces cooking times and allows lower temperatures to achieve the same results as conventional ovens, preserving moisture and texture in meats, pastries and baked goods.
The Inoxtrend VSDA007E is loaded by sliding up to seven GN1/1 gastronorm trays into the chamber. The operator sets the temperature between 30 °C and 270 °C and selects the fan speed or reverse mode using the mechanical dials. A timer is set for the cooking duration, and the oven begins preheating, reaching 260 °C rapidly to minimise waiting time. LED lighting inside the chamber allows the chef to monitor progress without opening the door, preventing heat loss. Once the timer signals completion, the trays are removed, and the next batch can be loaded immediately.
The oven is constructed from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of sanitising in professional environments. The cooking chamber has rounded corners to prevent food debris from accumulating, and the double-glazed door improves insulation while keeping the outer glass cool enough to clean safely. An ergonomic handle ensures the door can be opened and closed repeatedly without strain, even during peak service.
Mechanical controls on the front panel include a temperature dial, a timer and a selector for convection mode or combi mode with manual humidity adjustment. The AIR.Plus ventilation system offers two fan speeds and a reverse function, allowing the operator to tailor airflow for delicate items like meringues or robust dishes such as roasted joints.
The 9.3 kW power rating indicates the load the oven places on the electrical supply, requiring a three-phase 380-415 V circuit. The footprint of 920 mm wide, 800 mm deep and 850 mm high determines the space it occupies on the worktop or floor, while the stackable design permits two units to be installed vertically, doubling capacity without increasing the floor area. The temperature range of 30 °C to 270 °C covers processes from gentle dehydration to high-heat roasting, accommodating everything from slow-cooked vegetables to crisp-skinned poultry.
Cleaning involves wiping down the stainless steel exterior and the interior chamber after each service, focusing on the rounded corners and the fan guard. The double-glazed door can be cleaned with standard kitchen sanitiser, and the LED lighting remains visible even when the chamber is warm. The oven is designed for medium workload kitchens, handling approximately fifty meals per day with consistent results.
The VSDA007E is available in a stackable configuration, allowing two units to be combined with a special kit for increased capacity. The same model can be installed as a standalone unit where space permits.
