PROEVO PEDA 110E is a professional electric convection oven with mechanical controls, designed for kitchens where reliability, durability, and ease of use are essential. It is particularly suitable for medium and large-scale catering operations. The ovens are available in various sizes.
A convection oven moves hot air continuously around the chamber with a powerful fan, spreading heat evenly across every tray. The PEDA 110E adds steam injection to this airflow, letting the operator choose dry heat, moist steam or a combination of both. This control over humidity keeps roasts crisp outside and tender inside, while the even circulation prevents hot spots that would burn one side of a tray and leave the other undercooked. The oven is loaded by sliding full-size gastronorm trays in from the front, one above the other with 67 mm clearance between them. Ten GN 1/1 trays fit at once, allowing a single cycle to handle multiple dishes. The fan reverses automatically to maintain the same temperature at every level, so each tray receives identical treatment regardless of position. Steam is injected on demand, either as a burst to start the cycle or as a continuous mist for longer programmes. Controls are mechanical knobs for temperature, time and mode selection. Three main modes are available: convection for dry heat, steam for moist heat, and combi for a balance of both. The operator sets the desired temperature between 30 °C and 270 °C, starts the timer, and the oven maintains the chosen conditions until the cycle ends. The chamber and exterior are built from stainless steel, chosen for resistance to corrosion and ease of cleaning. A 710 mm width, 740 mm depth and 940 mm height give the unit a footprint that fits standard worktop spacing while leaving room for tray insertion from the front. The 12.0 kW power rating requires a three-phase 380-415 V supply, the standard circuit in professional kitchens for high-demand appliances. Stainless steel walls and rounded corners let steam jets loosen baked-on grease so a damp cloth wipes the chamber clean between services. Stainless steel surfaces wipe clean with a damp cloth, while the steam injection system flushes residues from the chamber without manual scrubbing. The fan and heating elements are protected behind removable panels, allowing access for periodic inspection without tools. The PEDA 110E is part of the Inoxtrend PROEVO series, designed for intensive use in professional kitchens.
