Combinated electric oven with analogic control panel for 20 baking sheets GN 1/1. It has automatic washing, programmable cooking menus and a cart and a grill in endowment.
A convection oven circulates hot air around food with a fan, ensuring even cooking and browning without rotating trays. The Inoxtrend CDA120E adds direct steam injection, which introduces moisture into the chamber. This prevents drying, keeps meats juicy and helps baked goods rise properly. The steam also transfers heat faster than air alone, cutting cooking times while preserving texture and flavour in traditional recipes.
The oven holds twenty GN 1/1 gastronorm trays, each spaced 65 mm apart for consistent airflow. A reversible fan system, branded AIR.Plus, pushes air from either side of the chamber, eliminating hot spots. The single fan speed keeps the airflow steady, so every tray receives the same treatment. External LED lamps light the chamber through a double-glazed door, allowing the chef to check progress without opening the door and losing heat.
Operation begins by selecting one of the 150 pre-programmed recipes, organised into six folders by food category. The touch screen displays each step, from pre-heat to final temperature. For custom dishes, the chef can store 150 additional programmes. Once the recipe is chosen, the oven pre-heats automatically. Trays are loaded onto the included trolley, which slides into the chamber. The core probe, inserted into the thickest part of the food, monitors internal temperature and signals when the dish is done. An exhaust valve releases excess steam and heat, maintaining the set temperature.
The chamber is built from stainless steel with rounded corners, which prevent food debris from collecting and simplify cleaning. An automatic washing system uses a detergent tablet to clean the interior without manual scrubbing. The oven connects via USB for software updates or recipe transfers.
The 30 kW power rating requires a three-phase 380-415 V supply, typical of professional kitchens. The footprint of 970 mm wide by 1030 mm deep fits standard worktop layouts, while the 1880 mm height allows clearance under extractor hoods. The oven includes a grill accessory for finishing dishes under direct heat.
Cleaning involves running the automatic wash cycle with the detergent tablet, then wiping the door glass and exterior surfaces. The rounded chamber corners and smooth stainless steel surfaces reduce scrubbing time. The reversible fan and exhaust valve should be checked periodically to ensure they remain unobstructed.
The CDA120E is positioned in the Inoxtrend catalogue as a high-capacity convection oven for professional kitchens requiring consistent results across large batches and varied menus.
