Indirect heating cap. 100 l
A boiling pan heats water in an interspace around the tank, creating low-pressure steam that transfers heat evenly across the cooking surface without scorching. This indirect method keeps temperatures stable and prevents hot spots, making it suited for delicate sauces, soups and stocks that need gentle, consistent heat.
The operator fills the 100 L tank with ingredients, closes the lid to retain steam and sets the 4-position switch to control power. A pressure gauge on the front panel shows interspace steam pressure, while a water-level viewer lets staff monitor the heating medium. Hot and cold water taps with a swivel nozzle are mounted on the worktop for filling or topping up without moving containers. Once cooking is complete, the pan drains through an outlet valve.
The tank sides and interspace are fabricated from AISI 304 stainless steel; the bottom is AISI 316 for extra corrosion resistance. A standard AISI 304 lid reduces steam loss, and a double-insulated lid is offered as an option. The unit measures 800 mm wide, 900 mm deep and 850 mm high, fitting a standard worktop footprint.
Power is adjusted via a 4-position switch on the front panel. A pressure gauge monitors interspace steam, and a safety valve with gauge prevents over-pressure. The appliance requires a 400 V 3-phase supply, drawing 14.4 kW under full load. At 128 kg, the pan is moved on a trolley or forklift and positioned on a reinforced floor.
Cleaning involves draining the tank, wiping the interior with a non-abrasive pad and rinsing the interspace through the water-level viewer. The lid and taps are washed separately, and the swivel nozzle is checked for blockages.
An optional double-insulation lid improves thermal retention for longer cooking cycles. Gas-fired versions are also available under a separate article number.
