A cooking vessel built for acidic ingredients heats the contents indirectly through a water-filled jacket that wraps the inner tank. The jacket transfers heat evenly around the sides and base, preventing hot spots that could scorch delicate sauces, fruit preserves or marinades. Because the food never touches the heating element, the risk of burning is greatly reduced, and the vessel can hold liquids at a steady simmer or gentle boil for hours without stirring.
The operator fills the inner tank manually through a swivel hose tap that supplies either hot or cold water. Once the ingredients are loaded, the balanced lid is clamped shut with metal fasteners and a silicone gasket, creating an airtight seal. An electromechanical thermostat and min/max selector let the chef set the desired temperature; the jacket then circulates hot water at that level, keeping the contents at a constant heat. A safety valve on the jacket opens at 0.5 bar, while a second valve on the lid releases excess pressure at 0.05 bar, protecting the vessel from over-pressurisation. An analogue gauge on the jacket face shows the internal pressure at a glance, and a low-water signal warns if the jacket level drops too far, automatically cutting power to the elements.
The inner tank is made of AISI 316 stainless steel, chosen for its resistance to corrosion from acidic foods such as tomatoes, vinegar or citrus. The outer jacket and all structural parts are AISI 304 stainless steel, which combines strength with easy cleaning. Thick fibreglass panels insulate the jacket, reducing heat loss and keeping the outer surfaces cool enough to touch. The satin-finish cover protects the insulation and gives the unit a professional appearance. Four adjustable stainless-steel feet allow the vessel to be levelled on uneven floors, and a chrome-plated brass drain tap at the front lets the operator empty the tank quickly without tilting.
Controls on the front panel include the thermostat dial, the min/max selector, and a manually resettable safety thermostat that cuts power if the temperature exceeds the set limit. A visible water-level indicator and filling tap on the jacket side make it simple to top up the heating circuit. The 16 kW power rating means the vessel draws a substantial load, so it must be connected to a dedicated circuit capable of supplying that current without tripping. The 800 mm width and 900 mm depth determine the floor space the unit occupies; the 850 mm height allows it to fit beneath standard worktop extractor hoods.
Cleaning is straightforward: the smooth AISI 316 and 304 surfaces wipe down quickly, and the jacket's drain tap lets the heating water be flushed out for descaling. The silicone gasket on the lid can be removed for thorough cleaning, and the athermic handles stay cool during operation, making the lid easy to lift. The swivel hose tap simplifies filling and rinsing, while the chrome-plated drain tap resists tarnishing and is easy to operate with wet hands.
The LQ/PIE410 is a single model with a 102/113 litre capacity, designed for professional kitchens that process acidic products on a regular basis.
