A boiling pot designed for the gentle, even processing of acidic foods such as tomatoes, fruit preserves and pickles. The Lady 900 L uses a water jacket to surround the inner vat with heated water, transferring heat indirectly and preventing scorching or hot spots. This method keeps the cooking temperature steady and protects delicate ingredients from direct contact with the heating elements, which is essential when working with high-acid products that can react with certain metals or burn easily.
The sequence begins by filling the jacket with water through the dedicated filling cock and level cock, ensuring the water reaches the visible minimum mark. The operator then loads the inner vat through the top opening, using the swivel hose and tap to add hot or cold water as needed. Once the lid is closed, the heating elements inside the jacket warm the water, which in turn heats the contents of the vat. The temperature is set either by an electromechanical thermostat with a min/max selector or a digital electronic thermostat, depending on the version. A manual resettable safety thermostat cuts power if the temperature exceeds safe limits, while a pressure gauge and safety valve monitor the jacket pressure, releasing excess at 0.5 bar. When cooking is complete, the contents are drained through the front tap or the larger butterfly valve, depending on the model.
The inner cooking vessel is made of AISI 316 stainless steel, chosen for its resistance to corrosion from acidic foods, while the outer jacket, lid and supporting structure are AISI 304 stainless steel with a fine satin finish. Thick glass fibre panels insulate the jacket, reducing heat loss and improving energy efficiency. The lid is balanced and fitted with an athermic handle for safe opening, and the entire unit stands on adjustable stainless steel feet that allow levelling on uneven floors. A visible signal warns if the jacket water level drops too low, automatically cutting the heating to prevent damage.
The 13 kW power rating requires a 400 V three-phase supply, typical of professional catering kitchens, and the 164 kg weight means the unit is moved on a trolley or forklift rather than carried by hand. The 800 mm width and 900 mm depth fit within standard worktop layouts, while the 850 mm height allows comfortable access for loading and stirring. The 102 to 113 litre volume provides capacity for batch cooking of sauces, soups or preserves without overfilling.
Cleaning involves draining the jacket through the level cock and flushing it with fresh water, while the inner vat is emptied through the drain tap or valve and scrubbed with non-abrasive cleaners suitable for stainless steel. The jacket heating elements are protected by the water and do not require direct cleaning, but the jacket itself should be inspected for scale build-up and descaled periodically. The lid, handle and outer surfaces are wiped down with a damp cloth and mild detergent, avoiding harsh chemicals that could damage the satin finish.
The Lady 900 L is available in indirect versions with electromechanical thermostats and direct versions with electronic thermostats, each suited to different temperature control preferences. The product sits in the CASTA catalogue under professional cooking equipment, specifically in the range of jacketed boiling pots for delicate or acidic foods.
