A drop-in cold basin maintains chilled water around gastronorm pans without refrigerating the food itself. Instead of a compressor, it circulates cold water from a remote refrigeration unit through a closed loop beneath the basin. The water absorbs heat from the pans and carries it away, keeping the contents at a steady low temperature. This method avoids frost build-up inside the basin and allows precise control over the cooling rate, which is essential for delicate items like seafood or salads that must stay chilled but not frozen.
The basin is installed into a worktop with a cut-out of 1065 by 580 mm. Once the remote refrigeration unit is connected, the operator fills the basin with water to the required level, then places up to three GN1/1 pans into the slots. The remote control sets the target temperature between +2 °C and +8 °C. The water circulates continuously, drawing heat from the pans and returning it to the remote unit, where it is cooled again before re-entering the basin. A drain valve with a G1/2 inner thread allows quick emptying for cleaning or maintenance.
The 1080 mm length accommodates three full-size gastronorm pans side by side, making it suitable for high-volume preparation areas. The 600 mm width fits standard worktop depths, while the 670 mm height ensures the pans sit at a comfortable working level. The 0.53 kW power rating reflects the load on the remote refrigeration unit, not the basin itself, so the electrical supply must match the requirements of the connected chiller. The temperature range of +2 °C to +8 °C is chosen to hold perishable ingredients safely above freezing while preventing bacterial growth.
The basin is constructed with effective thermal insulation to minimise heat transfer from the surrounding kitchen, reducing energy waste. The remote control allows the operator to adjust settings without accessing the unit directly, which is useful in busy kitchens where the basin may be installed in a tight space. The G1/2 drain valve simplifies routine maintenance, as water can be removed quickly without tools.
Cleaning involves draining the water, wiping down the basin and removing any food debris from the pan slots. The insulation and water circulation system require no additional upkeep beyond standard hygiene practices. The basin is designed for drop-in installation and is compatible with remote refrigeration units that match its specifications.
