This volumetric divider portions soft dough by measuring volume rather than weight. Dough is drawn into a calibrated chamber, then a piston expels it in equal measures. Swapping pistons adjusts the portion size, ensuring the dough remains uncompressed. This method preserves the gluten structure, allowing even rising during proofing.
Fresh dough is loaded into the hopper, and the operator selects the appropriate piston for the desired weight. A frequency converter controls piston speed, while a flour duster prevents sticking. Each portion is counted and released without compression. A closed-circuit lubrication system and contour lubrication minimise wear and maintenance.
The machine features a stainless-steel exterior for hygiene and durability. A 50 L hopper holds the batch, and a speed variator regulates output. The double-chamber suction piston system delivers consistent portions from 30 g to 1200 g, with a maximum weight error of 2% for unfermented fresh dough. It accommodates dough with up to 65% water content.
A 1.5 kW motor powers the divider, suitable for professional bakery use. The 550 kg weight requires a stable floor and a trolley for movement. Its dimensions of 700 mm by 1760 mm fit on a worktop or stand, providing space for portion collection.
Cleaning involves removing the hopper and wiping stainless-steel surfaces. The flour duster needs regular refilling, and the lubrication system requires periodic oil checks. Piston chambers should be inspected for residue after each use to maintain accuracy.
