Stainless steel knives
A bun divider transforms bulk dough into uniform portions ready for shaping. The SIGMA SPM30P uses a sheeter head to flatten the dough into a sheet of controlled thickness, then stainless steel knives cut the sheet into thirty equal pieces. The process eliminates hand-scaling, ensuring every bun starts at the same weight and proofing time.
The operator loads the dough onto the infeed tray, selects the portion weight between 25 g and 90 g, and starts the cycle. The aluminium cast head presses the dough into a continuous ribbon; the knives descend and separate it into thirty pieces. Food-safe polyethylene plates receive the portions and guide them to the discharge tray. The cycle completes in seconds, leaving the operator to transfer the portions to a worktop or proofer.
The structure is built from painted galvanised and electro-welded steel for stability and corrosion resistance. An aluminium cast head withstands repeated pressure without warping. Three polyethylene plates form the discharge surface, chosen for their durability and compliance with food-contact standards. Stainless steel knives maintain sharp edges through thousands of cuts.
The control panel sets the portion weight within the 25–90 g range. A single start button initiates the cycle once the dough is loaded.
The 0.5 kW motor draws a modest load from a 400 V three-phase supply, suitable for a dedicated bakery circuit. The 175 kg weight requires a sturdy floor and a trolley for repositioning. The 670 × 600 mm footprint fits between standard worktops, while the 2030 mm height clears most overhead cupboards without obstructing ceiling lights or ventilation hoods.
Cleaning follows the food-contact surfaces: the polyethylene plates and stainless steel knives detach for washing. The aluminium head and painted steel structure wipe down with a damp cloth. Regular knife sharpening maintains clean cuts and extends blade life.
The SPM30P is catalogued under dough dividers and portioning equipment.
