Stainless steel knives
A bun divider shears a single mass of risen dough into equal portions without tearing the gluten strands. The dough is pressed between two food-safe polyethylene plates; a set of stainless steel knives descends, cutting the sheet into 15 identical rectangles. Each rectangle is then rounded or shaped by hand or by a separate moulder, giving consistent weight and texture across every bun.
Load the hopper with the prepared dough, close the safety guard and select the portion weight on the control dial. The machine draws the dough forward, flattens it to the chosen thickness and shears it in one stroke. The operator removes the cut pieces from the discharge tray and returns any trimmings to the hopper for the next cycle.
The frame is built from painted galvanised and electro-welded steel for strength and corrosion resistance. The cutting head is a single aluminium casting that keeps the knives aligned. Three polyethylene plates form the pressure surface; they are removable for cleaning and replacement. The knives themselves are stainless steel and can be sharpened or replaced as a set.
A three-phase 400 V supply powers the 1.3 kW motor, matching the standard circuit used in professional bakeries. The 205 kg weight requires a fixed worktop or a sturdy mobile stand; castors are not included. The footprint of 605 mm by 660 mm fits between standard work surfaces, while the 1420 mm height allows the operator to load and unload without bending.
After each use, remove the polyethylene plates and wash them in warm water with food-safe detergent. Wipe the aluminium head and stainless steel knives with a damp cloth; do not immerse them. The painted steel frame can be wiped down with a mild cleaner. Regular sharpening of the knives maintains clean cuts and reduces dough sticking.
The SPA15 divides dough into 15 portions per cycle, adjustable from 100 g to 260 g each. It is catalogued under dough sheeters and dividers.
