Aluminium cast cover
A hexagonal dough divider mechanically portions yeasted or fermented dough into equal pieces without manual scaling. The machine presses the dough through a hexagonal grid of food-safe polyethylene dies, cutting it into uniform blocks that drop onto the worktop. This method eliminates hand weighing, speeds production and ensures consistent bake-off for rolls, buns or small loaves.
The operator loads the hopper with scaled dough, closes the aluminium cover and starts the cycle. The internal ram descends, pressing the dough evenly through the hexagonal dies. Each die shapes a piece within the 30–130 g range. The pieces drop onto the receiving tray in a single layer, ready for rounding or proofing. The cycle completes automatically, and the operator removes the tray to continue the workflow.
The structure is electro-welded galvanised steel, painted for corrosion resistance. An aluminium cast cover protects the pressing chamber and reduces weight. Food-safe polyethylene dies are removable for cleaning and replacement. The machine stands on adjustable feet to level it on uneven floors.
Controls consist of a start button and an emergency stop. The start button initiates the pressing cycle; the emergency stop halts all movement immediately.
The 1.3 kW power rating indicates the load on a three-phase 400 V circuit, typical of professional bakery equipment. The 605×655 mm footprint fits on a standard worktop or mobile stand. The 1100 mm height allows the operator to load the hopper without stooping. The 205 kg weight requires two people or a trolley for safe movement.
Cleaning involves removing the polyethylene dies, washing them in warm water with food-safe detergent, and wiping the aluminium and steel surfaces with a damp cloth. The dies should be inspected for wear and replaced when the edges become rounded. The machine should be unplugged before any cleaning or maintenance.
The SE37 is a single model with no variants. It is catalogued under dough dividers and portioning equipment.
