A manual dough sheeter flattens and stretches dough by passing it between two adjustable rollers. The rollers press the dough evenly, reducing its thickness with each pass while maintaining a consistent width. This method replaces hand-rolling, giving uniform sheets for pastries, pasta, pizza bases and laminated doughs without uneven pressure or fatigue. The gap between the rollers sets the final thickness, and the operator feeds the dough through repeatedly until the desired gauge is reached.
The ROLLMATIC S5BM is operated by placing the dough on the steel worktop and guiding it into the rollers. A cursor lever reverses the direction of the rollers, allowing the dough to be passed back and forth without removing it. Safety guards with micro-switches stop the rollers instantly if the guards are opened, preventing contact with moving parts. The unit handles all types of dough, from soft bread dough to firm pasta dough, by adjusting the roller gap.
Construction is a steel worktop mounted on a frame of the same material. The rollers and their adjustment mechanism are housed beneath the worktop, with the cursor lever and safety guards positioned for easy reach. The unit measures 108 cm in width, 183 cm in depth and 85 cm in height, giving a compact footprint for a worktop model. A power rating of 0.55 kW indicates a light load on the electrical supply, suitable for standard three-phase circuits found in professional bakeries. Cleaning involves removing dough residues from the rollers and worktop after each use. The steel surfaces are wiped down with a damp cloth and mild detergent, avoiding abrasives that could scratch. Safety guards are checked regularly to ensure the micro-switches engage properly, and the rollers are inspected for wear that could cause uneven sheeting.
