Manual sheeter on base with castors.
The ROLLMATIC R65-I/16 manual dough sheeter is designed to flatten and stretch dough efficiently. By passing dough between rotating cylinders, it ensures even thickness and aligns gluten strands without tearing. This process reduces manual labour and delivers consistent results for pastry, pasta, or bread dough. The adjustable gap allows precise thickness control, accommodating everything from thin filo sheets to thicker pie bases.
Operation begins by unfolding the side tables to create a stable workspace. Dough is placed on the infeed table and guided towards the cylinders. The micrometric adjustment system sets the gap in fine increments. The motor is activated using electric impulse keys or an optional foot control. After passing through the cylinders, the dough emerges flattened on the outfeed table. If further thinning is needed, the direction can be reversed for another pass at a narrower setting.
Mounted on a base with castors, the sheeter can be moved easily between workstations or stored. Folding tables save space, while extractable sections provide extra support for larger dough pieces. Safety features include cylinder guards with a microswitch that stops the rollers if opened, preventing accidents. A gas spring assists in lifting the guards smoothly. The quick belt tensioning system allows tool-free adjustments, reducing downtime during cleaning. Quick-release scrapers remove dough residue from the cylinders, while a flour drawer collects excess flour, also equipped with a safety microswitch.
The 1.1 kW motor operates on a 230 V single-phase supply, compatible with standard UK commercial circuits. Weighing between 250 and 300 kg, the sheeter is robust yet mobile on its castors. Its compact footprint fits most bakery workspaces, with a height that allows comfortable operation without bending. Folding tables reduce depth when stored, making it suitable for tight kitchens.
Cleaning involves removing the quick-release scrapers to wipe the cylinders, releasing belt tension for roller and belt maintenance, and emptying the flour drawer. Safety microswitches prevent operation while guards or drawers are open, ensuring protection during upkeep. The gas spring and quick-release mechanisms simplify access to internal components, streamlining daily maintenance.
This model includes an optional foot control for hands-free operation and an inverter for work cycle reversal. It is built for bakeries and professional catering kitchens where consistent dough thickness and efficiency are critical.
