This manual dough sheeter features inverter control to smooth and stretch dough evenly between adjustable rollers. The hand crank allows the operator to regulate pressure while the inverter maintains a steady motor speed, adapting to the dough's resistance. This process ensures uniform sheets for pastries, pasta, or pizza bases without overworking the gluten, preserving a light texture throughout the dough sheeting process.
To begin, the operator dusts the rollers and feeds the dough through the gap. Turning the crank, the inverter automatically adjusts the motor speed to keep it constant, regardless of dough thickness. Once the sheet reaches the required length, it can be trimmed or folded and passed through again if a thinner result is needed. The adjustable rollers accommodate various thicknesses, from thick pizza bases to delicate filo pastry.
The sheeter is built with a welded stainless-steel frame, supporting two parallel rollers and a hand crank. The inverter sits in a sealed enclosure under the worktop, shielding it from flour dust. Four adjustable feet allow levelling on uneven surfaces.
A single rotary knob controls the gap between the rollers. The inverter operates automatically, responding to crank speed and dough resistance without additional adjustments.
The sheeter runs on a 230 V single-phase supply, making it suitable for standard kitchen setups. Its weight of 252–260 kg requires a trolley or pallet jack for movement. The dimensions of 817 mm depth, 959 mm width, and 1265 mm height allow placement against a wall or worktop while leaving room for the operator to handle dough.
Cleaning is straightforward: brush off flour after use and wipe the rollers and frame with a damp cloth. The inverter enclosure should never be opened; any issues must be addressed by a qualified technician.
