Manual sheeter with foldable and removable tables.
This manual dough sheeter processes bulk dough into even sheets or strips without stretching or tearing. Two counter-rotating rollers press the dough, thinning it with each pass. The adjustable gap between the rollers sets the final thickness, enabling consistent results for pastries, pasta, or pizza. Matched roller speeds ensure smooth forward movement, preventing uneven tension and preserving the dough's structure for even baking and a professional finish across large batches.
To use the R62-T/14, unfold and lock the side tables. Place dough on the infeed table and guide it towards the rollers. Electric impulse keys or a foot control start the rollers, pulling the dough through. After each pass, reduce the gap incrementally until the desired thickness is achieved. For repeated sheeting, fold the dough and pass it again. The inversion function reverses the roller direction, allowing the dough to return without manual handling.
The sheeter features a 600 mm wide cylinder, offering ample space for large dough pieces. A 48 mm cylinder opening accommodates thicker doughs or multiple layers. Foldable and removable tables extend the workspace and simplify storage. Safety microswitches on the cylinder guards and flour drawer prevent operation when guards are open, protecting the operator. Gas springs ease lifting the guards, reducing strain. The clutched adjustment system provides precise control of the roller gap, enabling micrometric adjustments for fine sheeting. A quick belt tensioning and release system simplifies maintenance, while quick-release scrapers detach easily for cleaning.
The 0.75 kW motor runs on a 230 V single-phase supply, suitable for standard commercial circuits. The unit weighs 260 kg unloaded and 310 kg loaded, ensuring stability during operation. Its dimensions require a dedicated space in the bakery, with clearance for the foldable tables when extended. The removable tables allow the sheeter to be positioned against a wall or in a corner when not in use.
Cleaning involves removing the quick-release scrapers and wiping down the rollers and tables. The flour drawer should be emptied and cleaned regularly to prevent build-up. The belt tensioning system allows quick access for inspection or replacement. Safety microswitches and guards must be checked periodically to ensure proper function and compliance with workplace safety standards.
Inverter models include a built-in cutting unit, though knives are not supplied. This variant allows the sheeter to produce strips or shapes directly from the sheeted dough, streamlining production for items like fresh pasta or decorative pastries.
