Compact manual sheeter with foldable tables.
A manual dough sheeter transforms bulk dough into uniform sheets without mechanical pressure that can overwork the gluten. The operator feeds the dough between two rotating cylinders; the gap between them sets the thickness of the sheet. As the dough passes through, the cylinders stretch it evenly, producing a consistent texture that is difficult to achieve by hand. This method preserves the dough's structure while reducing preparation time, making it essential for laminated pastries, pizza bases and flatbreads.
The Rollmatic R50B/08 is operated by turning a hand crank that drives the cylinders. The operator places the dough on the feed table, adjusts the gap with the calibrated wheel, then turns the crank to draw the dough through. A joy-stick reverses the direction instantly, allowing the sheet to be passed back and forth until the desired thickness is reached. Foldable tables on both sides keep the workspace tidy and support the dough as it emerges.
Construction centres on a stainless-steel cylinder 500 mm wide, protected by guards that trigger a safety microswitch if opened. Gas springs assist the guards, preventing accidental closure. The unit is available either as a table-top model or mounted on a trolley for mobility around the kitchen.
Controls consist of a joy-stick for reversing the cylinder rotation and a calibrated wheel that sets the gap between the cylinders. The 0.55 kW motor provides sufficient torque for dense doughs without overheating, while the 400 V three-phase supply matches the standard circuit in professional bakeries.
The 702 mm length, 523 mm width and 803 mm height create a compact footprint that fits alongside worktops and under standard extractor hoods. The foldable tables reduce the overall width when not in use, freeing up space in smaller kitchens.
Cleaning involves wiping the cylinders and guards with a damp cloth after each use. The stainless-steel surfaces resist corrosion and can be sanitised with food-safe solutions. The gas springs and microswitch require no maintenance beyond occasional inspection to ensure they remain free of flour dust.
Two versions are offered: a table-top unit for fixed stations and a trolley-mounted version for kitchens that need to move the sheeter between prep areas or store it out of the way.
