Manual divider rounder.
The model DR-M is equipped with a frontal pedal instead of the traditional handle for the activation of the rounding.
A manual dough divider rounder shapes and portions yeasted dough into uniform balls ready for proofing and baking. The sigma-arm mechanism gently stretches the dough piece around a rotating cone, creating surface tension that tightens the gluten structure. This tension gives the finished roll its even rise and smooth crust without the need for excessive handling by the baker.
The operator loads a pre-scaled dough piece of up to 4 kg into the hopper. A front-mounted pedal replaces the traditional hand lever, freeing both hands to guide the dough as it enters the dividing chamber. Pressing the pedal lowers the dividing head, cutting the dough into equal portions and transferring each to the rounding cone. The cone spins, wrapping the dough around itself until the piece is smooth and spherical. The rounded dough balls are then ejected onto a tray or conveyor for the next stage.
Construction is heavy-gauge stainless steel throughout the frame and working parts. Two side-mounted handles and optional castor wheels allow the unit to be lifted clear of the floor for cleaning. The sigma arm and dividing head are precision-machined aluminium for consistent contact with the dough.
Controls are limited to the front pedal; no electrical settings are required beyond the 400 V supply. The 0.55 kW motor powers only the rounding cone, keeping the electrical load low enough for a standard three-phase circuit in a bakery.
The 4 kg maximum batch capacity suits small to medium production runs, while the 96 x 98 cm footprint fits on a standard worktop or mobile stand. The 245 kg shipping weight and 268 kg operating weight require two operators or a pallet truck for safe movement, but the mass also dampens vibration during rounding.
Cleaning is limited to daily wiping of the dividing head and rounding cone with a damp cloth to remove dough residue. The front pedal and castor wheels are wiped down after each shift, and the entire unit is moved aside weekly to sweep and mop the floor beneath it.
The DR-M/36 is a manual model in the DIRO range; no automated versions are listed for this article.
