A pizza dough press flattens dough between two heated plates, replacing hand-stretching with mechanical pressure. The plates warm the dough evenly, softening it so it spreads without tearing, while the controlled force ensures uniform thickness across every base. This method eliminates the skill needed for hand-tossing, giving the same diameter and weight every time, which is essential for standardised portions and predictable baking results.
The operator places a ball of dough on the lower plate, closes the press, and sets the pressing time. The adaptive motor automation lowers the top plate smoothly, pressing the dough to the chosen thickness. Once the cycle finishes, the plates open automatically, and the pressed base is ready to be transferred to a peel or tray. The independent temperature controls for each plate allow the dough to be warmed just enough to relax the gluten without starting to bake, so the edges stay soft and the centre remains stretchy.
The press is built with Teflon-coated aluminium plates 45 cm in diameter. The coating prevents the dough from sticking, so flour can be used instead of oil, keeping the traditional texture and flavour. The frame is constructed from stainless steel, supporting a motor and automation system designed for continuous use. Controls include separate temperature dials for the top and bottom plates and a timer for the pressing cycle.
A power rating of 5.10 kW indicates the load the press places on the electrical supply. It requires a 400 V three-phase circuit with neutral and earth, which is standard in professional kitchens for high-power equipment. The unit weighs 127 kg, so it is moved on castors or with a pallet truck and positioned permanently once in place. Its footprint of 630 mm by 730 mm fits on a worktop or a dedicated stand, leaving enough clearance for the plates to open fully.
The Teflon-coated plates need regular brushing to remove flour and dough residue after each service. The automation system requires no manual lubrication, but the motor and moving parts should be inspected periodically for wear. The press is designed for dough weights between 250 g and 500 g, producing bases up to 45 cm in diameter.
