A dough sheeter flattens and stretches dough by passing it between two rotating rollers. The rollers press the dough evenly, removing air pockets and creating a uniform thickness that hand rolling cannot match. This method ensures every piece of dough emerges with the same weight, texture and diameter, which is essential for consistent baking results. The gap between the rollers determines the final thickness, and adjusting it allows the operator to produce thin pizza bases, thicker focaccia or anything in between without tearing or overworking the dough.
To use the RM42 A, the operator places a piece of dough on the infeed tray, sets the desired roller gap with the adjustment lever, and starts the motor. The dough is drawn through the rollers, emerging on the outfeed tray at the chosen thickness. If a second pass is needed for very thin sheets, the operator simply returns the dough to the infeed side and repeats the process. Safety guards cover the rollers and moving parts, preventing accidental contact while the machine is running.
The RM42 A is built from stainless steel, which resists corrosion and is easy to clean. The adjustment lever lets the operator set dough thickness from 0.4 mm to 4 mm, covering the full range needed for most bakery products. The machine accepts dough pieces weighing between 210 g and 600 g and produces rounds with diameters from 260 mm to 400 mm, matching standard pizza and bread sizes.
The 0.37 kW motor runs on a 230 V single-phase supply, the standard circuit in professional kitchens. The 35 kg weight keeps the unit stable on a worktop without needing permanent fixing, yet it is light enough to move with a trolley. After use, the operator removes any dough residue from the rollers and trays with a scraper and wipes the stainless steel surfaces with a damp cloth.
