A steam condenser captures and cools steam drawn from cooking appliances, preventing it from entering extraction ducts where it can condense and cause blockages or corrosion. The unit uses a heat-exchange surface to lower the temperature of the steam-laden air below its dew point, turning water vapour back into liquid that can be drained away. This keeps extraction systems clear, reduces maintenance and stops grease-laden steam from escaping into the kitchen or outside.
The operator positions the condenser in the extraction path, typically above a bank of hobs or combi ovens. Steam-laden air enters one end, passes over the cooled surfaces and leaves the other end as drier, cooler air. Condensed water collects in a trough and is piped to a drain. No user settings are required; the unit runs continuously while the extraction system is active.
The condenser is constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning. Its 3400 mm length allows it to span multiple cooking stations, collecting steam from a wide area without needing multiple smaller units. The 900 mm width and 380 mm height are designed to fit within standard extraction ducting, making installation straightforward in most professional kitchens.
Cleaning involves wiping down the stainless steel surfaces and flushing the drain trough to remove any accumulated grease or scale. Regular maintenance ensures the heat-exchange surfaces remain efficient and the drain remains clear.
