The LS066EP static prover ensures precise temperature and humidity control for high-quality dough proofing. It is a compact and reliable unit for professional kitchens, helping to optimize the baking process and workflow.
A prover provides the warm, still conditions dough requires to rise before baking. Without a fan that could dry the surface or disrupt the gluten structure, this unit relies on radiant heat from its walls and a mild, natural convection current. Heat distributes evenly around each tray, while the sealed cabinet retains moisture released by the dough.
The operator can load up to sixteen GN 1/1 trays, eight on each side, spaced 78 mm apart to accommodate rising dough. Once the trays are in place, the door is closed and the temperature adjusted between 30 °C and 60 °C. The unit sustains the selected temperature without forced air, preventing skinning or uneven proofing. A single-phase 230 V supply powers the 2.0 kW element, operating continuously throughout the proofing cycle.
Stainless steel panels form both the interior and exterior, resisting corrosion from humidity and enabling quick cleaning after each use. The 1000 mm width fits through standard bakery doorways, while the 800 mm depth allows space for a trolley to pass. At 830 mm high, the top of the cabinet aligns with most worktop heights, simplifying tray handling without lifting.
A single control knob or digital panel—depending on the model—sets the temperature; no further adjustments are necessary. The 78 mm spacing between trays remains fixed, so the operator selects the number of trays based on batch size. The static system eliminates the need for filter changes or fan cleaning, requiring only the interior surfaces to be wiped down.
The 2.0 kW power rating reflects the load on the kitchen circuit; a dedicated socket is advised to prevent overloading other equipment. The 30–60 °C range meets the proofing needs of most yeasted doughs, from cool overnight sponge development to warm same-day rolls. The 1000×800 mm footprint matches that of a double-stack deck oven, allowing the prover to be positioned alongside for a seamless workflow from proofing to baking.
Cleaning involves wiping the stainless steel interior with a damp cloth after each use and removing any flour residue from the tray runners. The fixed spacing means no moving parts to disassemble, and the absence of forced air removes the need for filter maintenance.
The LS088EP is the 8+8 GN 1/1 model in the Inoxtrend prover range, tailored for medium-volume bakeries and pastry shops seeking consistent, gentle proofing without forced air circulation.
