The LS066EP static prover ensures precise temperature and humidity control for high-quality dough proofing. It is a compact and reliable unit for professional kitchens, helping to optimize the baking process and workflow.
A prover cabinet creates the warm, humid environment dough needs to rise evenly and develop its airy structure. The Inoxtrend LS066EP uses a static system: gentle, still air surrounds each tray, so delicate doughs are not disturbed by forced circulation. Temperature is held steady between 30 and 60 °C, giving the baker precise control over fermentation speed and final texture.
The cabinet holds twelve GN 1/1 trays in two vertical stacks of six. Each tray sits 78 mm above the next, leaving room for tall dough pieces without crowding. The operator loads the trays, sets the temperature on the control panel, and starts the cycle. Inside, the heating element and water reservoir maintain the chosen conditions; no additional steam injection is required. The dough rises until the baker removes it, ready for the next stage.
Construction is stainless steel throughout, chosen for hygiene and durability in daily use. The exterior measures 1000 mm wide, 800 mm deep and 730 mm high, a footprint that fits alongside most convection ovens. A 2 kW heating element draws power from a standard 230 V single-phase supply, the circuit commonly found in professional kitchens. The weight of the unit means it is moved on castors or with a trolley, not lifted by hand.
Cleaning follows from the materials and layout: stainless steel surfaces are wiped down after each shift, and the water reservoir is emptied and refilled daily to prevent scale build-up. The trays themselves are removed and washed separately.
The LS066EP is a single model; no variants or options are listed for this article.
