Vacuum packing machine 12 mc/h
A vacuum packing machine removes air from a bag before sealing it, preserving food by slowing oxidation and bacterial growth. The Evox31 Hi-Line creates a vacuum chamber around the bag, drawing out air with a pump until the pressure inside drops. When the air is gone, a heating element seals the open end of the bag, locking the vacuum in place. This method extends shelf life, keeps flavours intact and reduces freezer burn without chemicals or additives.
The operator places the food in a bag, inserts the open end into the sealing slot and closes the lid. The touch panel displays the five preset Chef cycles: marinating, infusing, gentle vacuum for delicate items, rapid vacuum for everyday use and a pulse mode for liquids. Each cycle runs automatically once selected, controlling the vacuum strength and sealing time to match the task. The machine completes the process without supervision, freeing the chef to work elsewhere.
The Evox31 Hi-Line is built in stainless steel with a compact worktop footprint of 495 mm wide, 645 mm deep and 288 mm high. The touch panel sits on the front face, giving clear access to the controls. Inside, the vacuum chamber accepts bags up to 300 mm wide and 400 mm long, large enough for most professional portions and small joints.
The 0.75 kW motor draws power from a standard 220-240 V single-phase supply, the circuit found in most commercial kitchens. At 37 kg, the unit is light enough to move with a trolley but heavy enough to stay stable on a worktop during operation.
Cleaning follows the parts the machine exposes: wipe the stainless-steel surfaces with a damp cloth and mild detergent, remove any food debris from the sealing bar and vacuum slot, and dry the chamber before the next use. The touch panel can be cleaned with a soft cloth to keep the display clear.
The Evox31 Hi-Line is part of the Evox Line of vacuum packing machines, designed for professional kitchens that need speed and consistency without manual adjustment. It sits in the catalogue under vacuum packaging equipment, alongside larger and smaller models for different bag sizes and throughputs.
