1 trolley(s) GN 1/1 / 1 trolley GN 2/1 / EN 600 x 400 / EN 600 x 800. Built-in motor.
Output:
Chilling: 100 kg / 90 min.
Deep-freezing: 70 kg / 240 min.
A blast chiller and freezer rapidly pulls heat from hot food, preserving texture, flavour and safety in ways a standard refrigerator cannot. The AT-20 uses high-velocity cold air driven by powerful compressors to surround every tray, dropping core temperatures from cooking heat to safe storage levels in minutes rather than hours. This method stops bacterial growth, locks in moisture and prevents the large ice crystals that ruin frozen food. Once the target temperature is reached, the unit automatically switches to a holding cycle, keeping food at the set point until it is needed.
The operator loads a standard gastronorm trolley—either GN 1/1 or GN 2/1—directly into the chamber. On the advanced control panel the desired programme is selected: HARD for rapid chilling to +3 °C, SOFT for deep-freezing to -18 °C, or a custom cycle saved from earlier use. A core probe can be inserted into the thickest item to ensure the entire load reaches the target. The cycle starts, and the display counts down the remaining time. At the end the data is stored, alarms are logged, and Bluetooth sends the results to a connected device for HACCP records. The trolley is then removed and transferred to refrigerated or frozen storage.
The AT-20 is built entirely of stainless steel with hygienic cathodic protection, resisting corrosion and making surfaces easy to sanitise. Insulation is expanded polyurethane foam free of CFCs and HFCs, reducing environmental impact while maintaining efficiency. Evaporators are treated with cataphoresis to inhibit odours and mould, extending their life and performance. Indirect airflow ensures even cooling without dehydrating the food, and the refrigerant is a low-GWP Freon.
Controls include a digital display, programme selector, core-probe input, Bluetooth connectivity and HACCP alarm storage. Each setting allows the operator to tailor the cycle to the food type, from delicate pastries to dense meat joints, and to save those settings for future use.
The 6.0 kW power rating means the unit requires a dedicated three-phase 400 V circuit with neutral and earth, typical of professional kitchens. The 450 kg weight indicates a floor-standing appliance that must be positioned on a solid, level surface; castors or feet are not included. The footprint of 890 mm wide by 1333 mm deep fits standard kitchen layouts and allows side-by-side placement with other GN-compatible equipment. The 2450 mm height clears most worktop and shelf installations but may require ceiling clearance checks in low-ceiling areas.
Cleaning involves wiping the stainless-steel interior and exterior with a damp cloth and approved sanitiser. The evaporator fins should be brushed or vacuumed periodically to remove dust and grease, and the drain pan emptied and disinfected. The polyurethane insulation does not require maintenance, but the door seals should be inspected for wear and replaced if they no longer compress fully.
The AT-20 is a single model; no variants are listed. It is positioned in the catalogue under blast chillers and freezers, alongside other Sammic units of varying capacities.
