A pasta cooker basket holds dry pasta below the waterline of a commercial boiler, letting the strands circulate freely while they hydrate and soften. The perforated base allows boiling water to pass through, cooking the pasta evenly without clumping or sticking to the bottom. Once the timer signals, the basket lifts clear of the water, draining instantly so the pasta can be tipped straight into a serving tray or holding pan without extra handling.
To use the basket, lower it into the boiler once the water reaches a rolling boil. Spread the measured portion of dry pasta across the base, ensuring no strand bridges the gap between the basket and the boiler wall. After the set cooking time, raise the basket and let it drip over the boiler for a few seconds before transferring the pasta to the next stage. The same basket can be reused immediately for the next batch, keeping the workflow continuous during service.
The basket is constructed from stainless steel, chosen for its resistance to corrosion in hot, wet conditions and its ability to withstand repeated lifting and draining without warping. The dimensions of 160 mm depth, 290 mm width and 215 mm height set the maximum single-batch volume, allowing the operator to judge how many baskets are needed for a given service without overloading the boiler.
Cleaning follows the same routine as the boiler itself: after service, rinse the basket under a tap to remove starch residue, then soak in warm water with a mild detergent if necessary. The perforations allow water to flow through freely, so no trapped food remains inside the mesh. Store the basket on a shelf or hook above the worktop to keep it dry and ready for the next use.
