A fork churrasco holds whole joints, poultry or game firmly on a rotisserie spit so the meat turns steadily in front of the heat source. The tines pierce the cut and the central collar slides onto the spit rod; as the rod rotates, the weight of the meat keeps the fork aligned, preventing slippage and ensuring every side cooks evenly. This method gives a crisp exterior while the juices circulate inside, producing consistent results without constant attention from the chef.
The operator slides the spit rod through the meat, positions the fork at the thicker end, and pushes the tines into the cut until the collar meets the surface. A second fork may be used at the opposite end for balance. Once secured, the assembly is mounted on the rotisserie motor and the heat source is lit. The fork remains in place throughout cooking, turning with the spit until the meat is done and ready to carve.
Constructed from stainless steel, the fork resists corrosion and withstands the heat of open flames or grill elements. The 50 cm length accommodates large roasts, whole lambs or sizable poultry, making it suitable for banquet-scale rotisserie work in professional kitchens.
Cleaning is straightforward: after use, the fork is removed from the spit, washed in hot soapy water, rinsed and dried before storage. Regular inspection of the tines ensures they remain sharp and free from bends that could affect grip.
