The operating principle of a backbar freezer counter involves a refrigeration system that actively removes heat from the interior compartment to maintain low temperatures. A cooling unit, often a monoblock, circulates refrigerant through coils within the insulated cabinet. This process chills the air inside, preserving frozen goods. The insulation of the cabinet minimises heat transfer from the surroundings, allowing the refrigeration system to operate efficiently.

To use the freezer counter, items are placed within the two drawers or behind the single door. The drawers are fitted with 110% extending stainless steel telescopic rails, allowing them to be pulled out fully for easy access to contents.
