A professional freezer maintains food at deep-freeze temperatures by circulating cold air evenly across every shelf. The refrigeration unit draws heat out of the interior and expels it outside, while thick insulation keeps the cold in and the ambient heat out. This method prevents ice crystals from growing and preserves texture, flavour and nutritional value over long storage periods.

The GEMM Freezer XFB/140 is loaded through a single full-height door. Six GN 2/1 gastronorm shelves slide onto adjustable rails, allowing the operator to organise the space for different container heights. Once the door is closed and locked, the touch control panel on the front sets the target temperature between -18 °C and -21 °C. The ventilated cooling system starts automatically, distributing cold air across each shelf so that every container reaches the same temperature. An automatic defrost cycle melts any ice build-up, and the condensate evaporates without manual intervention.

The cabinet is constructed from deep-drawn stainless steel, forming seamless internal walls that resist corrosion and simplify cleaning. The 80 mm insulation layer reduces energy consumption while maintaining stable temperatures. Rails inside the cabinet have 24 adjustable positions spaced 55 mm apart, giving flexibility to store shallow trays or tall containers. Internal LED lighting illuminates the entire space, and a key-operated lock secures the contents.

The 556 L capacity allows bulk storage of prepared dishes in standard GN 2/1 containers. The footprint of 1390 mm by 890 mm fits into most professional kitchens, while the 2090 mm height requires ceiling clearance. The temperature range of -18 °C to -21 °C is suitable for long-term storage of frozen food, meeting the requirements of food safety regulations. The 80 mm insulation thickness contributes to energy efficiency, reducing the load on the refrigeration unit during peak service hours.

Cleaning involves wiping the stainless steel interior with a damp cloth and mild detergent, avoiding abrasive pads that could scratch the surface. The deep-drawn walls have no seams or sharp corners, making it easier to remove spills and debris. The automatic defrost and condensate evaporation systems reduce the frequency of manual maintenance, though the exterior should be dusted regularly to keep the condenser coils efficient.

The XFB/140 is supplied with six GN 2/1 shelves. The unit is classified under climate class 5, ensuring reliable operation in warm and humid environments typical of professional kitchens.
