An upright freezer that stores frozen goods at a steady -18 to -21 °C, the GEMM FreeM SLIM SFB/01 keeps food safe without manual defrost cycles. A fan circulates cold air evenly across every shelf, so each tray chills at the same rate and no hot spots form when the door is opened. The air moves through a finned evaporator, pulling heat from the cabinet and expelling it outside, while a compressor pumps refrigerant through the system to maintain the set temperature around the clock.

The operator loads trays or containers onto three adjustable shelves, each sized to hold standard gastronorm GN 2/1 pans. Shelves slide on vertical rails spaced 65 mm apart, allowing the spacing to be tailored to taller items or stacked trays. Once the door is closed and locked, the touch panel on the front shows the current temperature and lets the user set the target range. An automatic defrost cycle runs at intervals, melting any ice that builds on the evaporator and draining the water away so the interior stays dry and hygienic.

The cabinet is built from stainless steel inside and out, resisting corrosion and standing up to daily cleaning. A 60 mm layer of insulation between the inner and outer walls reduces heat gain, so the compressor runs less often and energy costs stay low. The door seals tightly with a magnetic gasket, and a lock secures the contents during service hours.

Controls consist of a 2.8-inch touch panel that displays the cabinet temperature and allows the user to adjust the set point within the -18 to -21 °C range. The panel also shows when the automatic defrost is running and confirms the door is properly closed.

A 450 L capacity provides space for bulk frozen ingredients, pre-prepared dishes or finished products ready for service. The unit measures 640 mm wide, 700 mm deep and 2050 mm high, fitting through standard kitchen doorways and standing against a wall or between worktops. Three shelves, each 445 mm by 560 mm, are supplied with the freezer, and the vertical pitch allows up to nineteen positions for flexible storage.

Cleaning involves wiping the stainless-steel interior and shelves with a damp cloth and mild detergent, then drying to prevent ice build-up. The automatic condensate removal system drains water to a tray outside the cabinet, so no manual emptying is needed. The door gasket should be checked periodically for wear and replaced if it no longer seals tightly.
