Perfect for mixing and forming pasta into various shapes
A pasta maker that extrudes fresh dough at a steady rate, turning flour and liquid into strands or shapes ready for cooking. The Virtus CBF0012 combines a powerful motor with a gearbox submerged in oil, reducing friction and noise while driving a kneading paddle inside a sealed chamber. As the paddle rotates, it presses the dough against the walls, forcing it through a die at the base. The die determines the final shape—spaghetti, penne, lasagne sheets—so operators swap dies to match the menu. Air cooling prevents the motor from overheating during long service, while the oil-bath gearbox extends the life of the gears without daily maintenance.
Loading begins with dry ingredients through the interlocked lid; the lid must close before the motor starts. Once the machine is running, liquid is added gradually via the removable funnel, allowing the dough to reach the right consistency without stopping. The kneading paddle is designed to lift and fold the mixture evenly, so the operator does not need to intervene until the batch is complete. When the cycle finishes, the paddle unclips and lifts out for cleaning, and the die is unscrewed and rinsed separately.
The body is built from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of sanitising. Four swivel wheels allow the unit to be moved between workstations or stored against a wall, while the self-supporting frame eliminates the need for additional bracing. A three-phase electrical supply of 380-415 V is required, matching the circuits found in commercial kitchens and small production workshops.
The 2.25 kW motor draws enough current to power the paddle and gearbox continuously, supporting the rated output of 20 kg of pasta per hour. The footprint of 780 by 812 mm fits within a standard worktop run, while the height of 1390 mm allows operators to load ingredients without bending. The interlocked lid prevents access while the paddle is turning, reducing the risk of injury during operation.
Cleaning follows the removable parts: the kneading paddle, die and funnel are washed in warm water and detergent, then dried before reassembly. The stainless steel body is wiped down with a damp cloth, avoiding abrasive pads that could scratch the surface. The oil-bath gearbox requires an annual oil change, carried out by draining the old oil and refilling to the marked level.
The Virtus CBF0012 is positioned in the catalogue under pasta preparation equipment for professional kitchens and small-scale production.
