Non-standard Extraction Hoods

Non-standard Extraction Hoods — BHS designs and manufactures custom-sized and shaped stainless steel extraction hoods for restaurants, dining rooms, pizzerias, confectionery businesses and other HoReCa enterprises: a non-standard extraction hood is necessary when the dimensions and shapes of standard series hoods do not match the kitchen space architecture, equipment layout or ventilation system requirements; a custom-made extraction hood ensures proper collection of steam, smoke and grease particles directly above each appliance, according to the appliance group dimensions and the specific kitchen layout, and BHS manufactures such hoods to customer specifications, observing HACCP and ventilation standards. BHS offers non-standard extraction hoods together with a wide range of Non-standard Solutions.

Non-standard Extraction Hoods — an extraction hood (ventilation canopy) is a mandatory element of a professional kitchen above every hot processing appliance; standard hood sizes are 600, 800, 1000, 1200 and 1400 mm in width, but many HoReCa projects require appliance groups or room architecture that call for different dimensions or non-standard shapes, and BHS manufactures such hoods to order for professional kitchens.

When a non-standard extraction hood is needed

Non-standard Extraction Hoods — standard series hoods are unsuitable in several typical situations that BHS identifies during kitchen design. Appliance group with non-standard total length — if a kitchen appliance group (stove + fryer + grill) is wider or narrower than a standard hood size, a non-standard hood is required; the hood edges must extend 150–200 mm beyond the appliance group edges — if the appliance group is 1350 mm wide, a standard 1200 mm hood is too narrow. Wall or ceiling architectural constraints — A non-standard extraction hood may be necessary if a column or beam near the wall prevents installation of a standard rectangular hood; BHS designs a hood with a cut-out or non-standard shape around the obstacle; see Non-standard Solutions. BHS manufactures non-standard hoods.

Non-standard extraction hood shapes and configurations

Non-standard Extraction Hoods — BHS manufactures non-standard hoods in various shapes: extended linear form, L- or U-shaped corner form, island hood, low-profile hood for low ceiling heights and other configurations. Island-type non-standard hood — an island extraction hood is suspended from the ceiling above a central island in an open kitchen; the island hood size is precisely determined according to the appliance island dimensions; BHS manufactures island hoods to order specifications. Low-profile hood for low ceiling heights — in some HoReCa spaces, ceilings are low (below 2.5 m), and standard hood installation does not leave sufficient working height beneath the hood; BHS designs a low-profile hood while maximising the flow width; see Bar Equipment. BHS supplies non-standard hoods.

Hygiene and maintenance of stainless steel extraction hoods

Non-standard Extraction Hoods — an extraction hood is exposed to intense grease, steam and smoke; stainless steel is the standard material for professional kitchens because it is easy to clean and withstands the effects of disinfectant chemicals. Grease filter system — a non-standard extraction hood integrates standard or custom-sized grease filters; regular cleaning of the grease filter (once a week in an intensive kitchen) is a fire safety and HACCP requirement. Inner surface and maintenance accessibility — the inner surface of a non-standard hood is designed with smooth corners to facilitate cleaning; the hood size and installation height must be considered when planning maintenance access; see Stainless Steel Cabinets and Shelves. BHS manufactures HoReCa extraction hoods.

HoReCa usage scenarios

Pizzeria with a non-standard extraction hood above a wood-fired pizza oven — a wood-fired pizza oven is wider than standard electric appliances; the hood is manufactured to match the oven dimensions with a different smoke outlet location; BHS manufactured the hood to specifications. Restaurant open kitchen with a non-standard island hood — a chef’s central island in an open kitchen with a custom island extraction hood; the hood as a visual architectural element and functional ventilation appliance. Confectionery kitchen with a low-profile hood — low ceilings and intense steam exposure from kettles and baking equipment in a confectionery; a low-profile non-standard hood ensures ventilation without reducing workspace; BHS supplies the products. BHS manufactures non-standard extraction hoods for HoReCa kitchens.

Frequently asked questions

What measurements are needed to order a non-standard extraction hood? Non-standard Extraction Hoods — for designing a BHS non-standard hood, the following are required: appliance group length and width (or island dimensions), ceiling height, ventilation duct location and diameter, wall/column obstacles in the hood area; a precise kitchen plan or photographs facilitate design; see Non-standard Solutions.

Does a non-standard extraction hood include a ventilation fan? Non-standard Extraction Hoods — a BHS non-standard hood is a stainless steel canopy structure with grease filters; the ventilation fan and duct system are usually provided by the ventilation system installer; the BHS hood is designed to match the ventilation duct diameter; see also Bar Equipment.
