Professional electric boiling kettle designed for intensive and continuous use in catering establishments, food production facilities, and professional kitchens. The unit combines durable construction, safe operation, and maximum ease of use.
Power: 24 kW
2 tanks: Ø 474 mm
An electric boiling pan heats water indirectly through a jacket that surrounds each vat. The element warms the water in the jacket, which in turn transfers heat evenly to the inner vat without direct contact. This method prevents hot spots, scorching and localised overheating, giving consistent temperature across the entire cooking surface. The water jacket also acts as a thermal buffer, smoothing out power fluctuations and holding heat longer once the element cycles off.
The operator loads each 50 L vat with water or stock, then sets the desired temperature. A single button starts the automatic fill cycle; the built-in spectrometric sensor measures the level and stops the flow when the vat is full. Once the water reaches temperature, the pan holds it ready for blanching, poaching, simmering or holding pre-cooked items. A safety valve regulates steam pressure and vents excess automatically, while a drain strainer lets the operator empty each vat without lifting.
The inner walls and bottom are AISI 316 stainless steel, chosen for resistance to salts and cleaning chemicals. The worktop and outer casing are AISI 304 stainless steel, which withstands corrosion and mechanical knocks in a busy kitchen. A wet zone with integrated drainage is built into the worktop, so spilled liquids flow away without pooling. Four adjustable feet level the unit on uneven floors and raise it clear of surface water.
The control panel is simple: a fill button for each vat, a temperature dial and indicator lights. IPX4 protection guards the electrical components against splashes and steam, making the pan safe for humid environments.
A 24 kW power rating means the unit draws a substantial load and must be connected to a 400 V 3-phase circuit with neutral and earth. The 159 kg weight requires two people to move it safely; once in place, the stable construction prevents rocking or shifting during use. The footprint of 1200 × 700 mm fits a standard worktop depth and leaves room for side-by-side operation of both vats.
Cleaning is straightforward: the inner vats lift out for scrubbing, the wet zone drains directly into the waste pipe, and the smooth stainless surfaces wipe down quickly. The limescale-resistant sensor needs no special maintenance beyond routine descaling of the water jacket.
The EB 60+60/700 is a twin-vat model; single-vat versions are listed in the same ALBA range.
