A spiral mixer kneads dough by driving a spiral-shaped agitator through a stationary bowl. The spiral rotates on its own axis while also travelling around the bowl's circumference, stretching and folding the dough without tearing the gluten strands. This dual motion develops elasticity and aeration faster than a planetary mixer, producing a smooth, homogeneous mass ready for proofing.
The operator loads the bowl with flour, water and other ingredients through the PETG plastic lid. The lid's central hole allows late additions without stopping the machine. Once the quantities are set on the frontal control panel, the mixer starts. The spiral and shaft, both in stainless steel, move on pre-lubricated ball bearings, driven by inextensible toothed belts. The well-rounded bowl bottom ensures every portion of dough is worked evenly. After the programmed cycle, the operator removes the bowl or tilts it to discharge the dough.
Construction is stainless steel for the bowl, spiral and shaft. The bowl measures 530 mm across and 300 mm deep, holding up to 60 L of dough or 25 kg of flour with a minimum of 15 L of water. A transmission with toothed belts transfers power from the motor to the spiral. The frontal control panel is sealed to prevent water ingress during cleaning.
Controls on the panel set the mixing speed and duration. The power rating of 1.2 to 1.55 kW determines the electrical circuit required in the kitchen. The unit's footprint of 530 mm wide, 780 mm deep and 830 mm high dictates the floor or worktop space it occupies. At 96 kg, the mixer is moved with a trolley or pallet jack.
Cleaning involves removing the bowl and washing it separately. The stainless steel surfaces are wiped down, and the PETG lid is rinsed. The watertight seals around the control panel prevent moisture from entering the electrical components. The pre-lubricated ball bearings require no additional greasing.
The Sigma Tauro Automatic 60 L spiral mixer is classified under professional bakery equipment in the catalogue.
