Made of stainless steel
A spiral mixer that tilts to empty its bowl automatically, the SIGMA SAU-B-280HD transfers dough directly onto a worktop or into a divider without manual lifting.
The mixer uses a spiral-shaped agitator that rotates inside a fixed bowl. As the spiral turns, it stretches and folds the dough, developing gluten evenly without overheating. The fixed bowl keeps the dough centred, while the spiral's motion pulls it down and then lifts it back up, creating a kneading action that builds structure. This method gives consistent texture and aeration, essential for bread, pizza and pastry doughs.
To operate, the operator loads flour, water and other ingredients into the bowl, then starts the mixer. The spiral begins its cycle, kneading the dough until the set time elapses. Once the dough is ready, the operator activates the overturning mechanism. The entire bowl tilts forward, sliding the dough out in one smooth motion. The operator can guide it onto a worktop or into a divider, eliminating the need to scoop or lift heavy batches by hand.
Built on a heavy-duty steel frame, the mixer's structure supports continuous use in busy kitchens. The bowl and spiral are made of stainless steel, chosen for durability and ease of cleaning. The tilting mechanism is powered by a motorised system, controlled through a panel on the front of the unit.
The control panel includes a timer to set the kneading duration, a start button to begin the cycle, and a separate switch to activate the overturning function. An emergency stop button is also fitted for safety during operation.
With a 420 litre bowl, the mixer handles large batches, reducing the number of cycles needed for high-volume production. The 11.75 kW motor provides the power required to knead dense doughs, while the 400 V three-phase supply matches the electrical infrastructure of professional kitchens. The unit's weight of 1400 kg ensures stability during operation, and its adjustable height from 2150 mm to 2700 mm allows it to fit under standard worktop heights or be positioned for direct transfer into a divider.
Cleaning involves removing any dough residue from the spiral and bowl after each use. The stainless steel surfaces can be wiped down with a damp cloth and mild detergent. The tilting mechanism should be checked periodically to ensure smooth operation, and the motor and electrical components should be inspected by a qualified technician as part of routine maintenance.
The SAU-B-280HD is part of the SAU line, which includes models for 120 kg, 160 kg, 200 kg and 280 kg dough capacities. This model is categorised under heavy-duty bakery equipment in the SIGMA catalogue.
