A commercial mixer built for continuous, high-volume mixing of doughs, batters and heavy pastes. The Sigma RED LINE 81 Litre model combines two independent motors to drive the agitator, allowing each motor to run at a different speed or time without overloading a single drive. This dual-motor arrangement gives the machine the torque needed for dense mixtures while keeping the motors cool during long service.
The mixer works by rotating a large stainless-steel bowl beneath a fixed beater. The beater presses, stretches and folds the ingredients against the bowl wall, incorporating air and developing gluten or emulsifying fats. Because the bowl itself turns, the entire mass is worked evenly without dead spots, so every portion receives the same treatment. The 81 litre capacity lets the operator process large batches in a single cycle, reducing the number of loads needed for a full day's production.
Operation begins by loading the bowl with the measured ingredients. The operator selects either the first or second speed using the key selector, or sets the desired working time on the left or right timer. Once the start button is pressed, the bowl rotates and the beater engages. The timers count down and stop the machine automatically when the set period expires. If the timers fail, the key selector allows manual operation at either speed, so production is not interrupted. A separate electronic control panel with digital timers is available as an option for kitchens that prefer precise digital settings.
The mixer is constructed from thick steel plate welded into a rigid frame. The bowl, beater and all contact parts are made of stainless steel for hygiene and corrosion resistance. The two motors are mounted beneath the bowl, protected by a full-length guard. The electromechanical control panel is housed in a sealed enclosure on the front of the machine, with the two timers and the key selector clearly marked.
The 2.75 kW power rating indicates the load the mixer places on the electrical supply. A 400 V three-phase circuit is required, which is standard in professional kitchens with heavy equipment. The 192 kg weight means the unit is floor-standing and must be positioned on a solid, level surface to prevent vibration. The 530 × 920 × 1140 mm footprint shows the space the mixer occupies on the worktop or floor, including clearance for the bowl and controls.
Cleaning involves removing the bowl and beater for separate washing. The stainless-steel surfaces can be scrubbed with non-abrasive cleaners and sanitised. The control panel is wiped with a damp cloth; water must not enter the enclosure. The motors and gearbox are sealed and require no internal maintenance, but the guard should be checked regularly for damage or loose fixings.
An electronic control panel with digital timers is offered as an optional variant for operators who prefer digital time settings.
